ROUGHLY CHOP AN ONION, A BUNCH OF BROCCOLI, AND PEELED RED POTATOES. COMBINE VEGETABLES, GARLIC, BROTH AND WATER IN A STOCK POT AND COVER. LET SIMMER FOR ABOUT 5 MINUTES, OR UNTIL SOFTENED. TRANSFER TO A BLENDER AND BLEND WELL. ADD CREAM, GINGER, AND SALT AND PEPPER TO TASTE. TO PLATE: ARRANGE A SMALL MOUND OF TOASTED WALNUTS IN A SOUP BOWL, THEN PLACE A SLICE OF BRIE ATOP. SEASON THE CHEESE WITH GROUND GINGER, THEN POUR SOUP TO FILL THE BOWL. FINISH WITH A DRIBBLE OF MOUTHWATERING WALNUT OIL, SERVE HOT, AND ENJOY!
