LET SIT FOR SEVERAL MINUTES TO ALLOW THE JUICES TO REDISTRIBUTE, THEN CUT INTO THICK SLICES AGAINST THE GRAIN. TOP WITH MUSTARD AND LEEK, DRIBBLE PERKY PISTACHIO OIL FOR EXTRA NUTTINESS, AND ACCOMPANY WITH SIDE DISHES OF YOUR CHOICE.
