PREHEAT OVEN TO 200ºC. CUT PUMPKIN IN HALF AND PLACE ONTO A BAKING SHEET WITH AN ONION AND A CLOVE OF GARLIC. LIGHTLY BRUSH ALL VEGETABLES WITH DRIBBLE DOTS MOUTHWATERING WALNUT OIL. COVER WITH FOIL AND BAKE FOR ONE HOUR OR UNTIL VEGETABLES ARE SOFTENED. SCOOP OUT OR PEEL PUMPKIN, ONION, AND GARLIC, AND PLACE DIRECTLY INTO A BLENDER. ADD PLAIN YOGURT AND BLEND. YOU CAN ADD LOW SODIUM VEGETABLE BROTH IF YOU WANT A SOUPIER CONSISTENCY. TO PLATE, POUR INTO A SHALLOW BOWL AND DECORATE WITH HOMEMADE CROUTONS AND GORGONZOLA CHEESE. ENJOY!
